Ingredients

  • Fillings:
  • 2 C flour
  • 2 Eggs
  • 1/2 tsp salt
  • 1 stick butter
  • Cheese --1/2 lb dry cottage cheese, 1 egg beaten, 1/2 tsp salt, Mix all ingredients together. For sweet cheese, add 2 T sugar and vanilla
  • Potato -- 1 large cooked potato mashed, 1 T butter heaping, 1/2 tsp salt, 1/2 C sharp cheese shredded. Mix all ingredients

Preparation

Step 1

Mix flour, eggs and salt
Add water to make a soft dough
Knead until blisters appear
Dough should be soft
Divide into 2 portions
Roll out one portion at a time thin
Cut into 2 inch squares and place on each a desired filling
Fold in half to make triangle
Pinch edges with fingers or fork
Drop in boiling salted water until pirogi comes to the top
Simmer 10 minutes Drain
Melt butter and pour over pirogi
