Date Muffins

Ingredients

  • 1 cup chopped dates
  • 1 cup raisins
  • 3/4 cup boiling water
  • 1 egg, beaten
  • 1 cup apple sauce
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 1 1/2 cups w/w flour
  • 2 tsp orange peel
  • 1 tsp each cinnamon, ginger, nutmeg
  • 1/2 tsp cloves

Preparation

Step 1

Pour boiling water over dates and raisins and let stand for 5 mins. Add beaten egg, apple sauce, baking powder, baking soda, vanilla. Mix together and then add all rest of ingredients. Put into muffin pans and bake at 350F for 25 mins.
