Ingredients
- 1 lb elbow macaroni
- 2 T oil
- 1 small onion, diced
- 1 clove garlic, minced
- 1 can stewed tomatoes
- 3/4 c water
- 2 t chili powder
- 2 t dried oregano
- 2 t cumin
- 1/4 t red pepper
- 1 can black beans
- 1 10 oz pkg frozen corn, thawed
- 1 red bell pepper, diced
- 1 4 oz can diced green chilies
- 1/2 cup sour cream

Preparation
Step 1
Cook pasta as directed. Saute onion and garlic in oil. Add tomatoes, water, and spices. Bring to boil. Reduce heat to low, cover and simmer 15 min. Stir in beans, corn, red pepper, chilies. Cook 5 min or until corn is tender. Temper and add sour cream until well blended. Toss sauce with pasta. Sprinkle with cheese.
