    C Salsa

    sm can green chilies

    C Italian salad dressing

  • 1

    can black beans, rinsed and drained

  • 2

    T taco seasoning

  • 1/4

    t grnd cumin

  • 1

    can corn

  • 1

    can olives

  • 6

    flour tortillas (8")

  • 3/4

    sour cream

  • 1

    C grated cheese

  • 1

    C shredded lettuce or spinach

  • 1

    med tomato, chopped

  • 1/4

    C fresh cilantro, minced

Directions

In a large skillet, cook beef and onion over medium heat until meat is no longer pink, drain grease. Stir in the salsa, green chiles,salad dressing,seasonings, beans, corn, olives. Place three tortillas in a 2 qt baking dish coated with cooking spray. Layer with half of the meat mixture, sour cream and cheese. Repeat layers. Cover and bake at 400F for 25 minutes. Uncover, bake 5-10 minutes longer or until heated through. Let stand for 5 minutes before topping with spinach, tomatoes, and cilantro. 1 serving = 357 calories, 12g fat, 45g cholesterol, 864 mg sodium, 37g carbohydrates, 3g fiber, 23g protein.
