Honey-Citrus Halibut

  • 1/2 cup honey
  • 3 tablespoons fresh lime juice, divided
  • 1 teaspoon finely grated lime zest
  • 1/2 teaspoon ground chipotle chili powder
  • 4 (6 ounce) halibut fillets, 3/4 inch thick
  • Chopped fresh parsley (optional)
  • Glaze: In a small bowl combine honey, 1 tablespoon of the lime juice plus zest of and chili powder; set aside.



Step 1

Coat grill rack with non-stick cooking spray. Preheat grill to high (400°F to 450°F). Drizzle fillets with remaining 2 tablespoons lime juice; place fillets on grill. Grill 3 to 4 minutes per side. During last 1 to 2 minutes of grilling, brush each fillet with glaze. Remove from grill, sprinkle with parsley (if desired) and serve with wild rice and steamed yellow squash.
