Duck & Caramelized Onion Packages

Ingredients

  • 1 large sweet onion thinly sliced
  • 1 tbsp butter (no substitutes)
  • 2 tsp brown sugar
  • 2 tbsp port or dry sherry (optional)
  • 1 cup chopped duck breast or duck confit (5 oz)
  • 6 sheets frozen phyllo dough, thawed
  • 1/4 cup butter melted
  • 3 oz. mascarpone cheese

Step 1

COOK onion, covered in hot butter in a medium skillet over medium-low heat for 15 mins or until onion is tender. Add sugar. Cook and stir for 4-5 mins or until onion is golden. Stir in port or sherry if desired and cook 1 min. more. Remove from heat and stir in duck and cheese. Set mixture aside.

REMOVE phyllo from package and unroll. Place 1 sheet on work surface and brush with melted butter. Top phyllo with another sheet and brush with butter. Do 3 sheets. When finished cut into 12 squares.

PLACE a generous teaspoon of duck mixture. Gather sides together to form a little bundle or purse and pinch or twist the top. Place on an ungreased cookie sheet. (Can be frozen for up to 3 months).

BAKE in a 400 oven about 10 mins (12 mins if frozen) or until golden brown.
