    large sweet onion thinly sliced

    tbsp butter (no substitutes)

    tsp brown sugar

    tbsp port or dry sherry (optional)

    cup chopped duck breast or duck confit (5 oz)

    sheets frozen phyllo dough, thawed

  • ¼

    cup butter melted

  • 3

    oz. mascarpone cheese


COOK onion, covered in hot butter in a medium skillet over medium-low heat for 15 mins or until onion is tender. Add sugar. Cook and stir for 4-5 mins or until onion is golden. Stir in port or sherry if desired and cook 1 min. more. Remove from heat and stir in duck and cheese. Set mixture aside. REMOVE phyllo from package and unroll. Place 1 sheet on work surface and brush with melted butter. Top phyllo with another sheet and brush with butter. Do 3 sheets. When finished cut into 12 squares. PLACE a generous teaspoon of duck mixture. Gather sides together to form a little bundle or purse and pinch or twist the top. Place on an ungreased cookie sheet. (Can be frozen for up to 3 months). BAKE in a 400 oven about 10 mins (12 mins if frozen) or until golden brown. Makes 24.
