Ingredients
- 1 (7 oz) jar pesto sauce
- 1 (7 oz. or smaller) jar mayonnaise
- 2 small cans pitted & sliced black olives; 1 for decoration and 1 to mix into salad
- 2-1/2 lbs penne pasta
- 1/4 cup parmesan cheese
- 4 or 5 small to medium chopped sun-dried tomatoes in oil, drained and 1 extra for decoration
- pepper to taste
Preparation
Step 1
Cook pasta in salted, boiling water.
Put sun-dried tomatoes in food processor and pulse a few times. Then add the olives, pesto, mayo and cheese. Pulse again 2-3 times just to mix together.
The dressing can be made ahead and refrigerated. Do not add to pasta until serving time.
