Cedar Plank Cod with Spicy Chipotle Sauce
Soak cedar plank in water for 2-3 hours before using
- 4 (8 ounce) cod fillets
- Salt and freshly ground pepper
- 2 tablespoons fresh cilantro
- 2 chipotle in adobe sauce
- 3 green onions
- 1/4 cup mayonnaise
- 8 ounces sour cream
Heat grill to 400°F - 450°F. Sprinkle fillets with salt and freshly ground black pepper. Grill on cedar plank.
Sauce: In a small food processor bowl combine cilantro, chipotles, green onions and mayonnaise. Transfer to small serving bowl and fold in sour cream. Season with salt and pepper, to taste. Top each cod cake with a dollop of sauce, and serve.
