Hot German Potato Salad

  • 2 lbs. Small White Potatoes
  • Salt to taste
  • 1/2 Cup Diced Bacon
  • 1/2 Cup Minced Onion
  • 1 1/2 tsp. Flour
  • 4 tsp. Sugar
  • 1/4 tsp. Black Pepper
  • 1/4 to 1/3 Cup Vinegar
  • 1/2 Cup Water
  • 1/2 Cup Celery, diced
  • 3 Hard-Boiled Eggs
  • Salt, Pepper, and Vinegar adjusted to taste



Step 1

Cook potatoes in jackets until fork-tender. Peel and cut into 1/4" slices. In small skillet, fry bacon until crisp. Add onion and celery and saute until tender. Meanwhile in bowl, mix flour, sugar, sugar, salt and pepper. Stir in vinegar and water until smooth. Add to bacon, then simmer, stirring, until slightly thickened. Pour over potatoes. Toss until well mixed. Add hard boiled egg, sliced, and mix in.
