Meals (Bean Soup)

Ingredients

  • Beans
  • Ham Hocks
  • Ham Slice
  • Parsley
  • Celery Seed
  • Pepper
  • Carrots
  • Celery
  • Onions
  • Potatoes

Preparation

Step 1

Rinse beans, put in pot and fill with water to about 2 inches above beans. Bring to a boil and let boil for 5 minutes. Let sit for 2 hours. Drain beans, refill with new water. Rinse ham hocks and put into pot with beans. Add ham slice or a second ham hock.

Place carrots, celery, and onion in food processor. process until fine but not mushy. Add parsley, carrots,celery and onions to bot with beans and ham. Put a bunch of shakes of celery seed and pepper into pot.

Bring to a boil; turn heat to simmering and let simmer for at least 1 1/2 hours (taste beans to see if they need longer)

Remove ham hocks and shred meat into soup prior to serving.

Season with salt and more pepper (if needed)
