Ingredients

  • 4 pound french roast
  • 1 large onion, diced
  • 1 large tomato, diced
  • 1/2 green pepper, diced
  • 1/2 cup red cooking wine
  • 2 cups water
  • 2 tsp. paprika
  • 2 tsp. garlic powder
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 3 tbsp. oil

Preparation

Step 1

1. Heat oil in a large pot. Saute vegetables for 5 minutes. Add meat to pot and brown on all sides. Add wine water and spices. Cook on very low flame for 3 hours turning every hour. Check to make sure there is enough liquid and add more water if necessary. The liquid should come about half way around roast.
2. Slice the roast when cold. Reheat in gravy for another hour.
