Ingredients
- 1/2 cup butter, softened
- 1/2 cup sugar
- 2 egg yolks
- 1/3 cup milk
- 1 tsp almond extract
- 1 cup all purpose flour, sifted
- 1 tsp baking powder
- 1 tsp cornstarch
- 1/4 tsp salt
- 2 egg whites
- 1 tsp cornstarch
- 1/2 cup sugar
- 1 1/2 cups
- 1 1/2 cups coconut flakes
Preparation
Step 1
Preheat oven to 350.
Grease a 9 inch square baking dish.
Lightly mix together the softened butter, 1/2 cup sugar, egg yolks. combine milk and almond extract, then add together.
Sift together the flour, baking powder, cornstarch and salt. Mix well. Combine the two and pour into cake mould.
In a separate bowl beat egg whites until stiff peaks form. Add cornstarch and sugar, a little at a time, beating well after each addition. Beat until meringue is stiff and shiny. Gently fold in the coconut, trying not to stir too much. Spread meringue carefully over dough, trying not to overwork.
Bake for 35 minutes or until toothpick inserted in the centre comes out clean. Let cool completely in pan.
