Chicken Salad

Ingredients

  • 1 pkg meatless chicken patties
  • 2 c brown rice
  • 1 c frozen mixed veggies; peas, corn, carrots
  • 1/2 c chopped celery
  • 1/2 c chopped dried apricots
  • 1/2 c sliced almonds, toasted
  • (3 T olive oil)
  • (1 T white wine vinegar)
  • 1 T lime juice
  • (2 t dried mint)
  • Watermelon, sliced, save 1 c for Meal 7

Preparation

Step 1

Cook patties according to pkg directions. Cut each chicken patty into 1” cubes. Cook rice according to pkg directions. Combine mixed vegetables, celery, apricots & almonds in a lg bowl.
In a lidded jar, combine oil, white wine vinegar, lime juice & mint. Shake vigorously to mix dressing. Add cubed chicken and cooked rice to bowl & toss all. Pour dressing over salad, add salt and pepper to taste and toss again.
Serve sliced watermelon alongside chicken
salad.
