Crispy Sugared Walnuts

Ingredients

  • 2 1/2 c walnuts
  • butter
  • 1 c sugar
  • 1/2 c water
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 1/2 tsp vanilla

Preparation

Step 1

Heat walnuts in 375 degree oven for five minutes.

BUTTER SIDES OF A HEAVY 2 QT SAUCEPAN.

Combine sugar, water, cinnamon and salt. Heat and stir sugar until dissolved and mixture boils. Cook without stirring to soft-ball stage (236 degrees). Remove from heat, beat by hand 1 minute or till mixture just begins to get creamy. Add 1 1/2 tsp vanilla, blend, then and the warm nuts. Work fast as the sugar sets up quickly. Separate nuts with two forks on wax paper,let cool completely before storing.


DO NOT DOUBLE RECIPE, very difficult to coat evenly before sugar sets up on nuts.
