Toffee-Doodles

Yummy combination of Toffee bits and Snickerdoodles. You may be tempted to add extra toffee pieces but don't, more is NOT better in these cookies, you will have toffee melting all over the place if you use too much.

Ingredients
- COOKIES:
- 1/2 cup butter, unsalted
- 1/2 cup butter flavored shortening (Crisco)
- 1 1/4 cup sugar
- 2 large Eggs
- 3 cups all-purpose flour, sifted
- 2 teaspoons cream of tartar (sift with flour)
- 1 teaspoon baking soda (sift with flour)
- 1/4 teaspoon fine salt (sift with flour)
- 3/4 to 1 cup of Toffee bits, (I used homemade toffee)
- SUGAR COATING:
- 1/3 cup sugar
- 2 1/2 teaspoons cinnamon
Preparation
Step 1
Heat oven to 400 F.
Mix together 1/3 cup sugar and cinnamon in flat bottomed bowl and set aside.
Beat butter, shortening and 1 1/4 cup sugar in large bowl until light and fluffy. Add eggs, beat thoroughly.
Sift together flour, cream of tartar, baking soda and salt; slowly add to butter mixture, until well blended. Stir in Toffee bits.
Roll the dough into 3/4 to 1 inch balls; roll in Sugar-Cinnamon mixture. Place on parchment paper lined cookie sheets.
Bake 8 - 10 minutes or until lightly browned around edges.
Cool Slightly; remove from cookie sheet to wire rack. Cool completely.
