Indoor Grill Sweet and Spicy Shrimp Skewers
Makes two servings.
- 1 can (about 16 ounces) pineapple chunks in juice
- Salt and pepper
- 2 drops hot pepper sauce
- 1/4 teaspoon cayenne
- 1/4 teaspoon ginger
- 1 pinch brown sugar
- 1 pinch crushed red pepper
- 12 large shrimp
- 4 bamboo skewers, soaked in water at least 1 hour
Drain pineapples; set juice aside. Season pineapple with salt and pepper.
For the marinade, combine pineapple juice, hot pepper sauce, cayenne, ginger, brown sugar and red pepper.
Marinate shrimp in the refrigerator for at least one hour.
Thread shrimp and pineapple chunks on skewers, alternating shrimp and pineapple.
Cook on an indoor grill according to the manufacturer's instructions.
