Hollandaise Sauce for Poached Eggs
(Low Fat Version)

- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 2 teaspoons lemon juice
- 1 teaspoon Dijon mustard
Combine in a small saucepan. Cook and stir over low heat until hot.
Place poached eggs over toasted English muffins and drizzle with hollandaise sauce.
