Ingredients
- 8 oz (2 1/4 cups) uncooked bow tie pasta or 2 3/4 cups uncooked rotini
- 2 cups fresh corn kernels
- 3/4 cup cubed reduced fat cooked ham (4 oz)
- 2 tsp margarine or butter
- 1/2 cup sliced green oninos
- 1/2 cup chopped red bell pepper
- 1/4 cup reduced fat cream cheese (from 8oz tub)
- 1/2 cub skim milk
- Chopped fresh parsley, if desired
Preparation
Step 1
In large saucepan, cook pasta to desire doneness as directed on package, adding corn during last 6 minutes and ham during last minute of cooking time. Drain well. Meanwhile melt margarine in large nonstick skillet over medium heat. Add onions and bell pepper; cook and stir until tender. Reduce heat to medium-low; using wire whisk, beat in cream cheese and milk until smooth. Add pasta mixture; toss to coat. Sprinkle with parsley.
