Old Time Fudge

My dad's recipe. This is a family favorite and one my dad has been making since I was a little girl

Ingredients
- 2 cups sugar
- 3/4 cup milk
- 2 squares unsweetened chocolate cut up
- 1 tsp. light corn syrup
- 2 Tbsp. margarine
- 1 tsp. light corn syrup
- 2 Tbsp. margarine
- 1 tsp. vanilla
Preparation
Step 1
Line loaf pan with foil. Butter foil set pan aside.
Butter side of heavy 2 quart saucepan. In the saucepan combine milk, sugar, chocolate, and corn syrup. Cook over medium high heat to boiling. Stirring constantly to dissolve sugar. Avoid splashing mixture on sides of pan. Carefully clip candy thermometer to side of pan.
Cook over medium-low heat, stirring frequently till thermometer reads 234 degrees (soft ball stage). Remove from heat. Add 2 Tbsp. margarine and vanilla. Do Not STIR. Cool without stirring to 110 degrees. Remove thermometer. Beat vigourously till just beginning to thicken, add nuts. Continue beating till fudge becomes very thick and just starts to lose gloss.
Turn fudge into prepared pan. Score fudge into 1 inch pieces. Lift foil when firm and cut candy.
