SPICY CORN CHOWDER

Ingredients

  • 16 oz bag frozen corn
  • 32 oz vegetable broth
  • (2 c milk)
  • ⅓ c roasted red peppers, chopped
  • 1 jalapeño pepper, seeded & chopped
  • ¼ c chopped cilantro
  • 6 oz feta cheese, crumbled
  • 1 head red leaf lettuce, chopped
  • ½ cucumber, save other half for Meal 7
  • 2 stalks celery, chopped
  • ¼ c diced red onion
  • (Favorite dressing)
  • 1 bag whole wheat rolls

Preparation

Step 1

Combine ½ of the corn & broth in a food
processor. Blend until smooth. Pour into lg sauce
pan. Add remaining broth, milk, red peppers,
jalapeño & cilantro. Heat thru over med low heat.
Serve topped w/ feta cheese.
Combine lettuce, cucumber, celery and onion in
a lg bowl. Serve w/ favorite dressing.
Heat rolls and serve alongside chowder and
salad.
