Ingredients
- 1 1/2 cups flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup sugar
- 1/3 cup packed brown sugar
- 1/3 cup softened butter
- 2 eggs, room temperature
- 2/3 cup dairy French vanilla-flavored coffee creamer
- 1/4 cup cold strong brewed coffee
Preparation
Step 1
In a small bowl, whisk together flour, baking powder and salt. Set aside.
In a medium bowl, using an electric mixer on medium-high speed, beat granulated sugar, brown sugar and butter for 1 to 2 minutes or until fluffy. Add eggs, one at a time, beating well after each addition.
In another small bowl, combine coffee creamer and coffee.
Add flour mixture to sugar mixture alternately with coffee mixture, making three additions of flour and two of coffee and beating on low speed until smooth.
If desired, place paper liners in wells. Fill each well with about 1 1/2 tablespoons batter. Bake for 6 to 8 minutes or until a tester inserted in the center of a cupcake comes out clean. Transfer cupcakes to a wire rack to cool. Repeat with the remaining batter.
Spread with Chocolate Coffee Icing.
Variation:
Stir 1/4 cup mini semisweet chocolate chips into the batter after the last addition of flour.
