Cobb Salad with Chili-Lime Dressing

  • 4 oz can chopped green chillies, undrained
  • 2/3 c sour cream
  • 1/4 c fresh cilantro, coarsely chopped
  • 2 T lime juice
  • 1/2 t pepper
  • 1/4 to 1/2 t hot sauce
  • 1/4 t salt
  • 1 pkg 10 oz hearts of romaine lettuce
  • 16 oz can of kidney beans, rinsed and drained
  • 1 c shredded Monterey Jack cheese
  • 1 c chopped tomatoes
  • 1 pkg (7.5 oz) frozen diced cooked chicken breast thawed
  • 1 med ripe avocado, peeled and cubed
  • 1/2 chopped red onion
  • 1/3 c real bacon bits


Preparation time 25mins
Cooking time 25mins


Step 1

Place the first seven ingredients in a food processor; cover and process until blended. Chill until serving.

In a large bowl, layer the salad mix, beans, cheese, tomatoes, chicken, avocado, onion and bacon bits. Drizzle with dressing.
