Maple Cream Fudge

Ingredients

  • 3 cups brown sugar, lightly packed
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 cup evaporated milk
  • 2 tablespoon butter
  • 1/2 cup walnuts, chopped
  • 1 teaspoon vanilla

Preparation

Step 1

Grease a 9" square pan.
* In a saucepan, combine brown sugar, white sugar, salt, evaporated milk and butter.
* Stir over medium heat until the sugar dissolves.
* Continue cooking the mixture until it reaches the soft ball stage (236F). Stir occationally to prevent sticking.
* Remove from heat and pour into a large mixer bowl.
* Float the bowl in a sink which is 1/4 filled with cold water, allow to cool for 30 minutes.
* Beat for 5 minutes with electric mixer.
* Add nuts and vanilla and pour into pan.
* When cool, cut into squares.
Makes 36 1 1/2" squares.
