Ingredients
- 3 cloves garlic, minced
- 2 Tbsp. olive oil
- 4 cups tomato sauce
- 1 small eggplant
- 1 small zucchini
- 16 ounces fat-free cottage cheese
- 2-3 cups noodles (or 6 to 8 lasagna noodles broken in half)
- 1 small red onion, diced
- 1-2 cups baby spinach
- 1 cup jalapeno jack cheese, shredded
- 2 Tbsp. minced fresh parsley (optional)

Step 1
In skillet preheat oil; add minced garlic & cook until light brown. Turn heat down to low and layer ingredients in the following order:
1 cup tomato sauce
Single layer of eggplant, slightly overlapping
Single layer of zucchini
1/2 uncooked noodles
1 cup tomato sauce
cottage cheese
remaining noodles
spinach
onion
remaining 2 cups tomato sauce
jack cheese (or cheese of your choice)
Cover; cook 45 minutes over low heat; let stand 15 minutes or until set. Sprinkle with parsley before serving.
