Boston Cream Pie Parfaits from Scratch

By

The cake is light, and moist, and the subtle hint of almond makes it really special. The custard is smooth, and rich, and I added a touch of almond there too, along with the vanilla, and it is absolutely divine! Then there’s the ganache. Need I say more??

Preparation

Step 1

Cake
Step 1
Preheat oven to 350
In a mixing bowl combine all cake ingredients on low speed, then beat on high for 3 minutes. Pour into a greased 9x13" baking pan and bake about 35 minutes or until a tester comes out clean. Let cool.
Custard
Step 2
In a large sauce pan stir together all custard ingredients except vanilla and almond extracts over medium heat. Continue stirring and bring to a boil. Let boil for one minute. Remove from heat and stir in vanilla and almond extracts. Let cool.
Step 3
In a glass bowl heat the milk or cream in the microwave for 90 seconds, or until it's simmering. Pout in chocolate and let it sit for 2 minutes. After 2 minutes, stir until smooth. Let cool slightly.
Step 4
Once everything has cooled, cut the cake into cubes and start assembling the parfaits. Layer cake, custard, and ganache, and repeat until parfait glasses are filled, ending with ganache. Chill until ready to serve.
