Ingredients

  • 7 cups warm water
  • 1 oz dry yeast
  • 2 tbsp sugar
  • 14 cups bread flou
  • 8 tbsp salt
  • 1 cup olive oil
  • Semolina for dusting

Preparation

Step 1

1. Combine water, sugar, yeast, and whisk to dissolve, wait until foamy.
2. Combine flour and salt. On low speed, add water gradually, turn the speed to medium, work util elastic, smooth texture.
3. Transfer dough to an oiled bowl, cover and let rise in warm place until double, about 1 1/2 hours.
4. Punch down and divide into 4 oz pieces and shape each into a ball.
5. Stretch 10 inch rouds by hand. Top with ingredients and bake at 450 deg. F
