Ingredients
- 2 Tbsp butter
- 2 Tbsp olive oil
- 4 oz double smoked bacon, diced
- 1 cup diced celery
- 1/2 cup diced white onion
- 1 Tbsp minced garlic
- 2 lb mixed seafood (salmon, halibut, scallops, lobster, shrimp, clams)
- 3 Yukon gold potatoes, diced with skins on.
- 1 cup white wine
- juice of 1 lemon
- 8 cups whipping cream
- 6 Tbsp chopped chives
- pinch chili flakes
- salt and pepper to taste

Preparation
Step 1
Heat butter andoil over medium high heat and stir in bacon, celery, onion and garlic. Cook, stirring for 3-5 minutes or until onions are soft. Add seafood and potatoes. cook, stirring for 2 minutes. Stir in wine and lemon jice and bring to boil. Reduce heat and simmmer 10 minutes or until reducewd by 3/4. Add cream, bring to a boil, reduce heat and simmer, stirring occasionally for about 30 minutes, or until potatoes are soft and soup has thickened slightly. Stir in chives, chili flake sand season with salt and pepper.
