Down Home Chicken

Ingredients

  • 1/2 tsp black pepper
  • 1/4 tsp sea salt
  • 1/2 tsp garlic powder
  • 1 bay leaf
  • 2 carrots, cut into 1/2-inch slices
  • 1 large russet potato, cut into 1-inch wedges
  • 1/4 c diced onion
  • 1 rib celery, diced
  • 1 c fat-free, low-sodium chicken broth
  • 1 Tbsp balsamic vinegar
  • 2 boneless, skinless chicken breasts

Preparation

Step 1

Add all ingredients to the slow cooker, and stir to combine, adding chicken last.

Cover and cook on LOW for 6-8 hours, or until chicken is cooked through.
