Grilled Pineapple Salsa

  • 1 fresh pineapple
  • salt
  • ground pepper
  • 1 red onion, chopped
  • 1 bunch of fresh cilantro, chopped
  • 1 jalapeno, minced
  • 1 lime
  • 1-2 tbsp olive oil
  • 1-2 tbsp rice vinegar



Step 1

Stand pineapple on end and cut off the outer layer of skin. Lay pineapple on its side and cut into 1" thick slices. Season with salt and pepper to taste. Place on the grill and cook for 5 minutes per side. Set aside to cool.

Cut pineapple into cubes, discarding the center core. Place in a bowl and add onion, cilantro, jalapeno, lime juice (1 lime), olive oil and vinegar. Mix well. Serve at room temperature.
