Aebelskiver - Thai Style

Ingredients

  • 2 cups coconut milk
  • 1 1/2 cup rice flour
  • three eggs
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 3/4 cup unsweetened ground coconut
  • peanut oil
  • scallions, cilantro to fill

Preparation

Step 1

Lightly grease the wells with peanut oil, and heat on medium. Pour about 1 tablespoon batter into the wells of the pan. The batter should sizzle when it hits the hot metal. Sprinkle with scallions and cilantro at this time. Cover with a round lid like from a wok and cook for a few minutes. Bottom should be slightly golden.


Other fillings to use could include fresh corn kernels, tapioca, etc.
