Good side for Jerk Chicken

Ingredients

  • 2 1/2 cups water
  • 1 cup uncooked long-grain rice
  • 1/2 cup chopped dried pineapple
  • 2 teaspoons butter
  • 1/2 teaspoon grated lime rind
  • 1/4 teaspoon salt
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon chopped green onions
  • 2 1/2 tablepoons fresh lime juice

  • 1 1/4 cups water
  • 1/2 cup uncooked long-grain rice
  • 1/4 cup chopped dried pineapple
  • 1 teaspoon butter
  • 1/4 teaspoon grated lime rind
  • 1/8 teaspoon salt
  • 2 Tbsp chopped fresh cilantro
  • 1 1/2 tsp chopped green onions
  • 1 Tbsp fresh lime juice

Preparation

Step 1

Bring water to boil in a medium saucepan; add rice and next 4 ingredients (rice through salt). Cover, reduce heat and simmer 20 minutes or until liquid is absorbed. Reomve from heat; stir in cilantro, onions and juice.
