Caramelized-Onion, Spinach, and Bacon Quiche

Ingredients

  • 1 uncooked pie crust, such as Pillsbury
  • 1 10 oz package of frozen spinach, thawed and squeezed dry
  • 1/4 cup of sour cream
  • 2 TBSP minced shallots
  • 1/2 cup of light cream
  • 2 eggs
  • salt and pepper
  • 3/4 cup of caramelized onions
  • 2 TBSP of minced sun dried tomatoes
  • 2 TBSP cooked and crumbled bacon
  • 4 oz of feta cheese

Preparation

Step 1

Preheat oven to 350
spray pie plate with cooking spray and unroll pie crust, crimp edges. (You could also use an uncooked crust that is in a pan already-if you like)

Mix spinach with sour cream, shallots and salt and pepper- set aside.
Whisk eggs and cream. Stir approximately 1/3 cup of egg mixture into spinach mixture.

Spoon spinach mixture into bottom of pan. Add caramelized onions, sun dried tomatoes, bacon and feta cheese. Pour remaining egg mixture over. Place pie plate on a baking sheet. Bake for 45 minutes. Let rest for 10 minutes before serving.
