Asparagus with ginger vinaigrette

- 1 lb Asparagus
- 2 Tbsp White Wine Vinegar
- 1 tsp dijon
- 1/4 C olive oil
- 1.5 Tbsp pickled ginger, drained
- 2 Tbsp finely chopped shallots
- 2 tsp chives
1. Mix Vinegar, dijon, and olive oil in blender to emulsify.
2. Add chopped ginger, shallots, and chives.
3. Blanch/Steam Asparagus, let cool
Toss dressing w/ Asparagus & serve a t room temp. .
