Black Eye Pea Cornbread

Ingredients

  • 2 boxes Jiffy cornbread mix or 2 packs betty crocker cornbread mix
  • 1 lb. ground beef
  • 1/2 bell pepper, chopped
  • 1/2 onion, chopped
  • cheddar cheese
  • 1 can black-eyed peas, drained, or same amount of cooked black-eyed peas

Preparation

Step 1

Mix cornbread mix, set aside
In skillet, brown ground beef along with bell pepper and onion.
Pour this mixture into cornbread mix.
Add cheddar cheese to taste.
Add black-eyed peas.
Pour into large cast iron skillet.
Bake according to cornbread pkg directions.
When almost done, sprinkle more cheddar cheese over.
