Ingredients
- 2 cups white rice.
- 2 teaspoon saffron threads, crumbled, or teaspoon powdered saffron.
- 1 quart water.
- 2 tablespoons olive oil.
- 1/2 cup finely chopped onion.
- 1 lb. lean ground pork or beef.
- 1 teaspoon minced rosemary or 1/2 teaspoon dried rosemary, crumbled.
- 1/4 cup fresh or canned tomato sauce.
- salt.
- pepper.
- 4 eggs.
- 2 cup Parmesan cheese.
- 1-1/2 cups very fine dried bread crumbs.
- oil for deep-frying.
Preparation
Step 1
1) Cook 2 cups of white rice in rice cooker and set aside.
2) Mix saffron and water over high heat in a pan.
3) Add cooked rice and bring to boil.
4) Stir and then cover.
5) Reduce heat and let simmer until rice becomes slightly sticky.
6) Remove from heat and let cool.
7) Heat different pan over medium-high heat with oil.
8) Put in onions and saute until soft.
9) Add ground meat, rosemary and tomato sause.
10) Add salt and pepper for taste.
11) Mix 2 beaten eggs, cooled rice and cheese in bowl.
12) Scoop handful of rice mixture into hand and flatten out.
13) Put 1 tablespoon of meat mixture into center of patty.
14) Close hand and wrap meat mixture into rice mixture.
15) Roll into ball.
16) Repeat until all ingredients are used.
17) Beat 2 more eggs in different bowl.
18) Place bread crumbs in another bowl.
19) Dip rice balls completely into egg.
20) Then roll rice balls in bread crumbs.
21) Repeat for each one.
22) Pour oil into deep fryer and heat.
23) When oil is heated, carefully drop a few rice balls at a time into fryer, turning frequently so evenly browned.
24) Remove rice balls and put on paper to drain exess oil.
