Spinach Pie

  • 2 Eggs, beaten
  • 1 (10 oz.) Pkg. Frozen Spinach, cooked and drained
  • 1/4 Cup Butter, softened
  • 1 lb. Monterey Jack Cheese, shredded
  • 1/2 tsp. Salt
  • 2 Tbs. Parmesan Cheese, grated
  • 1 tsp. Baking Powder
  • 1 Cup Milk
  • 1 Cup Flour



Step 1

Combine eggs, spinach, butter, jack cheese, salt, Parmesan cheese, baking powder, milk and flour in a large bowl. Mix well after each item is added. Refrigerate for 1 hour in the bowl. Lightly coat a 17 x 12 inch jelly roll pan with cooking spray. Spread mixture into pan. Bake at 350 degrees for 45 minutes. Slice into serving-sized pieces.
