Meringue Cookies

Ingredients

  • 4 egg whites
  • pinch of salt
  • 2 tsp lemon juice
  • 1 cup sugar
  • 1 tsp vanilla

Preparation

Step 1

Beat egg whites with salt until foamy.Add lemon juice and beat until stiff.
Gradually add sugar and beat until meringue is stiff and glossy.
On parchment paper on large cookie sheet spoon heaping spoonfuls of meringue to form mounds 3 inches apart. With the back of a spoon shape the center of each mound into a shell.
Bake at 250 for 60 minutes.
turn oven off and let stand until cool.
Carefully peel off paper.
fill with ice cream or fresh fruit.
