Jim's Jicama, Daikon, Murliton, and Mango Salad with a Citrus Dressing

Ingredients

  • medium sized jicama, cut into small cubes
  • 2 chayote squash/mirliton, cored, not peeled, cut into small cubes
  • 2 cups finely cubed daikon
  • 1 mango, cored, peeled, cut into medium cubes
  • 1 red onion, peeled, cut into small cubes
  • Dressing
  • 1/2 cup orange juice
  • 1 T Dijon or stone ground mustard 1T olive oil
  • 2 t sugar
  • 2 T white wine vinegar
  • 1 t parsley, finely chopped
  • 1 t basil, finely chopped (optional)
  • 3 T cilantro, finely chopped
  • 1 t hot sauce (e.g., Crystal Sauce)

Preparation

Step 1

Use a whisk to mix all of the dressing ingredients. Pour over salad ingredients, mix well. Chill and serve.
