Ingredients
- 1 tsp. oil
- 1/4 lb. uncooked medium shrimp, peeled, deveined
- 1/8 tsp. ground red pepper (cayenne) (chipotle MJB)
- 2 flour tortillas (8 inch)
- 2 KRAFT Pepper Jack Cheese Slices with a TOUCH OF PHILADELPHIA
- 1/4 cup fresh salsa
- 1/2 avocado, sliced
- Side dish: Chicken fiesta dip (minus chicken)
Preparation
Step 1
HEAT panini grill.
HEAT oil in small skillet on medium heat. Add shrimp and red pepper; cook and stir 3 to 4 min. or until shrimp turn pink.
TOP 1 tortilla with 1 cheese slice, shrimp, salsa and avocados; cover with remaining cheese slice and tortilla.
GRILL 4 min. or until golden brown. Cut into wedges.
Serving Suggestion
Serve with a mixed green salad and your favorite fresh fruit to round out the meal.
If You Don't Have a Panini Grill
Heat skillet on medium heat. Cook quesadilla 3 min. on each side or until cheese is melted and quesadilla is golden brown on both sides, gently pressing down top of quesadilla with spatula to flatten slightly as it cooks.
How to Devein Raw Shrimp
To devein raw shrimp, first remove the outer shell. Then make a lengthwise shallow cut on the outer curve of the shrimp to expose the black vein. Loosen the vein with the tip of a sharp knife, then pull with your fingers to remove.
