Sides (Blue Cheese Potatoes)

Ingredients

  • 2 pounds red potatoes, peeled and cut into 1/2-inch pieces
  • 1 1/4 cups chopped green onions, divided
  • 2 Tbsp olive oil, divided
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 ounce crumbled blue cheese

Preparation

Step 1

1) Layer potatoes, 1 cup green onions, 1 Tbsp oil, basil, salt and pepper in 4 1/2-quart slow cooker. Cover; cook on low 7 hours or on high 4 hours.

2) Turn slow cooker to high. Gently stir in cheese and remaining 1 Tbsp oil. Cook for 5 minutes to allow flavors to blend. Transfer potatoes to serving platter and top with remaining q/4 cup green onions.
