Ingredients

  • 3/4 c all-purpose flour
  • 1 t baking powder
  • 1 t ground cinnamon
  • 1/2 t baking soda
  • 1/2 t salt
  • 1/4 unsalted butter
  • 1/4 cup solid eg shortening
  • 1 c packed light-brown sugar
  • 1 egg
  • 1 t vanilla extract
  • 1 small apple, peeled, cored, chopped
  • 3/4 c quick cooking oats
  • 1/2 c sweetened coconut
  • confection sugar for topping

Preparation

Step 1

Heat oven to 375. coat a 9 x 9 inch sq baking pan with cooking spray.
Mix flour , baking powder, cinnamon, baking soda, and salt in bowl.
Beat butter, shortening & sugar in lg. bowl until smooth & creamy. Beat in egg and vanilla . Stir in flour mixture, apple, oats & cocunut. Spread in prepared pan.
Bake at 375 for 25- 30 minutes
