Poppyseed Cake

Ingredients

  • 1 12 oz can Solo Poppy Filling
  • 1 C shortening
  • 1 1/2 C sugar
  • 4 eggs separated
  • 1 tsp vanilla
  • 1 C sour cream
  • 2 1/2 cups sifted flour
  • 1 tsp soda
  • 1 tsp salt

Preparation

Step 1

Cream shortening and sugar until light and fluffy
Add Solo filling
Add egg yolks, one at a time, beating well after each addition.
Blend in vanilla and sour cream.
Sift together flour, soda and salt, add gradually to Solo mixture, beating well after each addition.
Fold in stiffly beaten egg whites
Pour into a greased 9 or 10 inch tube pan, which has the bottom lined with waxed paper.
Bake 350 about 1 hour and 15 to 20 minutes or until done. Allow cake to cool about 5 minutes.
Remove from pan and peel off paper.
Decorate by sifting confectioners sugar through a paper doily.
