Strawberry & Buttercream Cake *****

This is my favorite! I even made it for myself for Mother's Day 2009. I also took it down to Orlando for Tyler's Birthday/Graduation 2009, from freezer to airplane it did just fine.
I'll have to be sure to take a pic the next time.

Ingredients

  • 3 pints fresh strawberries
  • 1 1/2 cups heavy cream
  • 2-3 cups Nilla wafer crumbs
  • 1/4 cup butter (melted)
  • 1 1/2 cup butter softened
  • 2 ts vanilla
  • 1/2 ts vanilla
  • 5-6 cups 10x sugar
  • 2 eggs-beaten

Preparation

Step 1

1. Wash and slice the strawberries, keep a few whole for garnish.

2. Cream butter, sugar, eggs and 2ts vanilla.This mixture should be thinner than buttercream icing that you would spread on a cake.

3. Depending on the size of your spring-form pan, mix enough crumbs and melted butter together to suit your taste. Press mixture firmly into the bottom of your pan.

4. Whip heavy cream w/ 1/2 ts vanilla.

5. Starting w/ the creamed mixture, make layers of buttercream and strawberries, ending w/ strawberries.

6. Finish off the top of the cake with whipped cream, garnish w/ whole strawberries.

7. Refrigerate for several hours before serving. This cake freezes well , just make sure you allow enough time to thaw before serving.
