Shav (Sorrel) Raw Passover Soup

"Shav" is a traditional spring time soup made with the fresh leaves of the sorrel plant. Although this soup is traditionally cooked in an eastern European manner, sorrel is a plant that takes very well to salads and other "green" dishes. Since sorrel has a very unique "lemony" tart flavor, it mixes well with spinach, another spring green.

Ingredients

  • Shav:
  • 8-9 cups fresh greens (sorrel and spinach work very well in combination with each other)
  • 1/2 -1 bunch chopped scallions, and / or chopped onions
  • 2 TBS Extra virgin olive oil
  • 2-4 cups of cold water or enough to blend the raw greens into a soup mixture
  • 1/4 cup lemon juice (if more intense lemon flavor is wanted)
  • 2 TBS Fresh chopped dill
  • salt to taste.
  • Mizrachi Tomato Salad:
  • 4 tomatoes, chopped
  • 1 clove fresh garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 TBS extra virgin olive oil
  • 1 TBS dry mint
  • 1 small sweet onion, chopped

Preparation

Step 1

Shav:
Blend all of the ingredients, except for the onions/scallions and the dill. It should be served cold and have a very tart lemon flavor. Serve with scallions and dill. For an untraditional preparation, serve with finely grated carrots, or julienne jicama (not found here in Israel), or chopped cucumber.

Tomato Salad:Chop the tomatoes and combine the rest of the ingredients together.
Toss and serve.
