Easter Pie*** (Jackie Len)

This recipe makes 4 pies. Divide as you want to make less pies

Ingredients

  • 1 lb supersod (diced)
  • 1 lb dry sausage (diced)
  • 1 lb prosciutto (diced)
  • 3 pounds ricotta
  • 1 large basket cheese(unsalted)(or 2 small) (Corrados)
  • 1/2 pound grated cheese
  • 2 dozen eggs(beaten)
  • pepper (to taste)
  • parsley (to taste)
  • 8 pie crusts
  • 2 egg whites (beaten)

Preparation

Step 1

Mix all ingredients together. Place one pie crust on the bottom of the greased 8x8 square pan. Fill with Filling mixture. Place second pie crust on the top of the filling. Seal all seams together with the top and bottom pie crust. place five x's in the top of each pie. Brush each pie with egg whites. Bake for 1 hour and 10 minutes at 350 degrees
