SCAMPI WITH BELL PEPPERS AND ZUCCHINI

This recipe can be prepared hours ahead and refrigerated. Ideal for company
Ingredients
- 3/4 C (1-1/2 sticks) butter - (see note below)
- 2 red bell peppers cut into 2" long, 1/2" wide strips
- 3/4 lb. zucchini cut into 1/2" diagonal pieces
- 3/4 C chopped shallots (about 4 large)
- 1/4 C finely chopped garlic
- 1/4 C drained capers
- Red pepper flakes to taste
- 2 lbs. large uncooked shrimp, peeled and deveined
- 1/3 C chopped fresh basil or to taste
Preparation
Step 1
Melt butter in heavy large skillet over medium high heat. Add bell peppers, zucchini and shallots; sauté until shallots begin to soften, about four minutes. Add garlic and sauté for an additional minute. Add capers and transfer mixture to a large baking dish or gratin dish. Cool completely, cover and set aside for up to 4 hours.
Preheat oven to 450. Stir shrimp into veggie mix and bake until shrimp are cooked through, stirring occasionally, about 20 minutes. Sprinkle with basil before serving with rice. Makes 6 – 8 servings.
Note: The veggies can be prepared as a side dish – instead of butter, use just enough lemon olive oil to moisten them and either bake or sauté to desired doneness.
