Asparagus and Spinach Frittata

Ingredients
- 12 cooked asparagus spears
- 2 cups frozen chopped spinach, cooked and drained
- 2 1.tablespoons olive oil
- 2 Italian sweet sausages with casing removed
- 1 clove garlic, minced
- Pinch salt and pepper
- 5 large eggs, beaten
- 1 cup shredded 3 cheese blend
Preparation
Step 1
1. Preheat oven to 350 degrees.
2. Cut asparagus in 2-inch pieces.
3. Choose a cast iron skillet or other pan that can go into the oven. Heat oil in pan over medium-high heat. Add sausages and cook for 8-10 minutes, breaking them into crumbles, until cooked through. Add asparagus, spinach, garlic, salt, and pepper. Cook and stir for 5 more minutes.
4. Pour eggs evenly over sausage mixture and cook for 6-8 minutes on low heat, without stirring or disturbing the pan, until eggs are mostly set.
5. Transfer pan to oven. Bake for 10-15 minutes or until frittata is firm. Sprinkle with cheese while still in oven. Turn oven off and let frittata sit in oven for 5 minutes more. Removed from oven, let cool, and cut into wedges. Eat cold, warm, or at room temperature.
