Ingredients
- 4 loin pork chops (1/2" thick)
- salt and pepper
- 2 Granny Smith apples, peeled and thinly sliced
- 1 (29 oz) can sweet potatoes in heavy syrup, drained
- 1 (10 oz) jar orange marmalade
- 1/3 cup honey mustard
Preparation
Step 1
Cut 4 (18") pieces of heavy-duty foil.
Place 1 pork chop in the center of each piece of foil and sprinkle salt and pepper on top. Placer an equal portion of sliced apples around each pork chop. Place an equal portion of sweet potatoes on top of each pork chop
In a small bowl, combine the marmalade and honey mustard. Mix well and spoon an equal portion over each pork chop.
Wrap foil in a tent pack around each serving (fold down the top a couple of folds leaving the foil loosely on top. Tightly seal sides.)
Oven: Cook in a preheated 450 degree oven on a baking sheet and bake for 20-30 minutes or until pork chops are fully cooked.
Grill: Preheat grill to medium-high heat. Place packets over direct heat, close lid and cook for 13-20 minutes or until chops are fully cooked. Turn over after 10 minutes and move as needed to obtain even heating.
