Ingredients
- Crust:
- 1cup1 cup sifted flour
- 1/2cup1/2 cup quick cooking oats
- 1/2cup1/2 cup brown sugar, packed
- 1/2cup1/2cup butter, softened
- Filling:
- 1can1 can pumpkin (2 cups)
- 1large can1 large can evaporated milk (12 ounces)
- 22 eggs
- 3/4cup3/4 cup white sugar
- 1teaspoon1 teaspoon cinnamon
- 1/2teaspoon1/2teaspoon ground ginger
- 1/2teaspoon1/2 teaspoon ground cloves
- Topping:
- 1/2cup1/2cup chopped pecans
- 1/2cup1/2cup brown sugar, packed
- 2Tablespoons2 Tablespoons butter, softened
Preparation
Step 1
Using pastry blender, combine crust ingredients until crumbly. Press into 13x9 pan and bake at 350 15-20 minutes. Combine filling ingredients and pour over hot crust and bake 20 minutes more. Combine Topping ingredients and sprinkle over pumpkin and bake 15 to 20 minutes or until set. Can use as bars or top with whipped cream for a dessert.
